BRUNSWICK STEW

With the cold weather among us, we truly welcome anything warm… blanket with hot cocoa, coffee or tea in hand. A special somebody in front of the fireplace or TV will do also. This hearty meal will warm your insides and packed with oh so much flavor. There are a lot of ingredients with many steps but it yields a big pot. So well worth it, so delish!
INGREDIENTS
½ lb Ground Turkey
½ lb Ground Beef
2 Cups Shredded Chicken (can use more or less)
½ Cup Onions, diced
1 Cup Carrots
2 Celery Stalks, diced
1-2 Cloves of Garlic, minced
1-2 Bay Leaf
1 tsp Pepper (to taste)
1 tsp Thyme (to taste)
2 Cans Cream-style Corn
2 Cans Tomatoes, diced
¼ Cup BBQ Sauce (to taste, more or less, if preferred)
1/3 Cup Worcestershire Sauce
1 Cup Beef Broth
Dash of hot sauce (optional)

DIRECTIONS
(Tip) Can use 2 cooking skillets, one for browning the meat and 2nd for cooking the onions, carrots and celery until tender (translucent). Cooking both simultaneously will shorten your total cooking time. I actually used one pan (less dish washing, lol).
 
 
(Optional) Shaved down cooking time by separately steaming carrots and potatoes.
Be sure to pour excess grease from meat. While carrots steamed, cooked celery and onions with bay leaves until tender. Add carrots when done then add garlic. Mix. Cook for 5-7 minutes until tender. Set carrot mixture aside, take bay leaves out.
 
 
Build on meat mixture by adding shredded Chicken and can tomatoes to meat mixture. Mix then add corn.
(Tip) Have on med-heat. Be sure to mix often when adding more ingredients to pot, not to stick or burn. I used Rotisserie Chicken, to save on time, but if you want to cook & shred chicken it is equally welcomed. Can substitute 2nd can of tomatoes for 2 Tbsp tomato paste, cream-style corn for regular kernel corn, or one can of each.
 
 
Return Carrot, Celery and onion mixture to pot. Mix.
***Photo shows me adding my second can of tomato and corn to mixture. Added on this step because I was only going to use 1 can of corn & tomatoes, but after all it is stew which have substance to it. So add those to steps 4-6.
 
 
You can add the potatoes when you add the carrot mixture, but I added it at this stage along with Worcestershire & barbecue sauce, beef stock and spices. I also added a few dashes of hot sauce (optional).
 
 
Let simmer for 20-25 minutes to incorporate all flavors.
Serve and enjoy. (Left) A dollop of sour cream with a dash or two of hot sauce and(Right) Just as-is with a sprinkle of Parsley for garnish.
(Tip) There are many ways to make Brunswick Stew and some use pork and/or veal. Be creative with toppings, your taste buds will thank you. No right or wrong way, enjoy.
