Cajun Shrimp & Sausage Pasta

By | Monday, August 26, 2013 2 comments

If you follow my blog then you know that I get bored with food at times but I love trying new dishes. One of my friends on social media posted a picture of a dish that looked so mouth watering that I could almost taste it, lol. So I wanted to share with you all. Here's what you need.

1/2 -3/4 lb Fettuccine (cooked)
2 Tbsp Olive Oil
1lb large Shrimp (deveined)
1 tsp Essence seasoning (recipe below)
1 ½ smoked Turkey Sausages (sliced and quartered)
½ cup Green Pepper (diced)
½ cup yellow onion (diced)
1 Tbsp Garlic (minced)
½ cup Chicken Stock
1Tsp Thyme
1 Tsp dried Basil
½ cup heavy cream
½ cup Parmesan (grated)

Essence Creole Seasoning
2-1/2 Tbsp Paprika
2 Tbsp Salt
2 Tbsp Garlic Powder
1 Tbsp Black Pepper
1 Tbsp Onion Powder
1 Tbsp Cayenne Pepper
1 Tbsp dried Oregano
1 Tbsp dried Thyme

Boil pasta, follow directions on the box. Heat 1 Tbs Olive Oil over med to high heat in large pan. Season shrimp with 2 Tsp of Essence seasoning. Saute until almost done. Remove and set aside.

Place remaining Olive Oil pan to sauté Onions and Bell pepper until onions are translucent (about 3 mins). Add Sausage and cook for another minute.

Add Garlic to pan (can buy a clove of garlic, I had this around the house) sauté for about 30 seconds. Add Chicken Stock to pan and scrape any brown bits that formed at bottom of pan. Add Thyme, 1 Tbs of Essence Seasoning and ½ tsp salt (cook 2 minutes). Add Heavy Cream to pan (cook additional 2 minutes). Return Shrimp to pan, add pasta.

Since my daughter do not eat shrimp, I replaced a portion with chicken in a separate small pot. For time sake I used this fully cooked chicken, but you can cook and cut up a chicken breast.
Continue to cook sauce and pasta, stirring occasionally (about 3-5 minutes). Remove from heat, add basil and top with Parmesan.

If you don't eat a lot of spicy foods, use a little less of those ingredients (Paprika, Cayenne, pepper). Just a hint of spice, enough to get the cajun flavors. This a 'BIG' hit in our household, had to make it twice. Hope you try it, hit me up if you do. Enjoy!
(Can add or substitute for personal taste: chicken, mushrooms, broccoli, peas, etc)
